Jerusalem Artichoke (Helianthus tuberosus L.) is a vigorous perennial grown for its cheerful yellow blooms and nutritious, edible tubers. This tall, upright plant reaches 4–10 ft. tall and 2–3 ft. wide, creating a striking presence in the garden. Its bright, sunflower‑like flowers appear from late summer into fall and are highly attractive to pollinators, butterflies, and beneficial insects.
